Wild Game Recipes: Turkey Salad

Turkey Salad
Don’t waste those turkey legs, thighs and other dark meat. Make them into this delicious sandwich spread.
1 medium-size jar pimentos
1 tablespoon sugar
5 eggs, boiled, peeled and chopped
1 bell pepper, diced
1 stalk celery, diced
1 small onion, diced
1 cup mayonnaise
2 salad pickles, diced
Salt and pepper, to taste
Boil turkey pieces until done. Scoop off turkey broth and save. Allow turkey pieces to cool, then debone. Chop meat into pieces, and add all ingredients except mayonnaise and broth. Add 1/2 cup broth and stir in desired amount of mayonnaise.
