Wild In The Kitchen: Whiskey-Glazed Gobbler

Whiskey-Glazed Wild Turkey

• 1 wild turkey breast

• 1/4 cup whiskey

• 1/2 stick butter

• Salt and pepper

• 1 cup chicken stock

• 3 tablespoons honey

• 2 tablespoons orange juice

Remove the turkey breast leaving the skin on. Make a brine from 1 cup of salt to one gallon of water. Soak in brine overnight. Remove, rinse and pat dry. Preheat oven to 325 degrees. In a Dutch oven, heat two tablespoons of butter until bubbling. Salt and pepper turkey breast. Place the breast skin-side down into the butter and let skin brown for about 5 minutes. Turn it over and add the chicken stock. Cover with a lid and move to the oven. In a separate skillet, melt 4 tablespoons of butter over medium heat. Whisk in the honey, whiskey and orange juice. Set on low heat and let the mixture reduce by half. Cook the turkey breast for 10 minutes, brush with half of the glaze and cover with lid. Twenty minutes later, brush the remaining glaze on, leave the top off and increase the temperature to 400 degrees. Cook for 15 to  20 minutes more.
