Wild In The Kitchen: BBQ Wild Turkey On The Grill

I am a big fan of the smoked turkey at Jim ‘N Nick’s BBQ. Most turkey is too dry for me. I experimented with this recipe trying to come up with something close to Jim ‘N Nick’s. It is pretty danged good.

1 whole wild turkey

1 cup of favorite BBQ sauce

1/2 cup of chopped onions

1 cup of chicken broth

3 tablespoons of parsley

1 tablespoon of thyme

1/4 cup of lemon juice

1/2 cup of melted butter

Prepare covered grill or smoker by allowing coals to burn down on one side of grill. Adding wet applewood chunks is best. Wash, pluck and field-dress turkey thoroughly and pat dry inside and out. Add butter to skillet and cook onions until tender. Add all the other ingredients, including BBQ sauce to mixture and mix with whisk. Simmer for five minutes. Paint mixture on turkey with a brush. Place turkey on grill over indirect heat and adjust vents to cook slowly. Using a meat thermometer, cook until the deepest part of the thigh next to the bone reaches 165 degrees.
