Mike Bolton | May 2, 2020

Cajun Turkey Broccoli Alfredo

1 pound boneless turkey breast

2 cups macaroni pasta

2 cups broccoli florets

3 tablespoons Cajun seasoning

2 tablespoons olive oil

2 tablespoons butter

3 cloves garlic, minced

1/2 cup dry white wine

2 cups heavy cream

8 ounces Parmesan cheese

Salt and pepper

In large pot, bring 4 quarts salted water to boil. Add pasta and cook. Drain pasta, reserving cooking water. Set pasta aside. Return water to boil. Add broccoli and boil until just tender and bright green. Drain and set broccoli aside. Cut turkey breast into 1-inch squares and sprinkle with Cajun seasoning. In large skillet, heat oil until shimmering. Sauté turkey and remove. Return skillet to stove. Over medium-high heat, melt butter and sauté garlic. Add wine and bring to simmer. Add cream and simmer about 2 minutes. Add grated Parmesan cheese. Season with salt and pepper. Add reserved pasta to skillet and toss gently to coat. Arrange broccoli over pasta; top with turkey and garnish with additional Parmesan cheese.
