BBQ Turkey Sliders

This is a great recipe for that turkey leg and wing meat you always end up with and aren’t sure how to utilize.

2 pounds deboned turkey

1/2 cup favorite BBQ sauce

1/2 cup Italian bread crumbs

1 large Vidalia onion, sliced

3 tablespoons olive oil

1/4 cup water

salt and pepper

16 Sister Shubert yeast rolls

Chop the dark meat turkey into very fine pieces. Place chopped turkey and bread crumbs into a large plastic bowl along with 1/4 cup of water. Season with salt and pepper and mix thoroughly. Mold the turkey into 16 even-size slider patties. Heat 1 tablespoon of oil in a cast iron skillet over medium heat. Add the patties and cook for four to five minutes per side. Remove the turkey patties, and add the remaining oil to the skillet. Add the onions and caramelize them over medium heat, adding water as needed to de-glaze the pan. Add the BBQ sauce to the onions when they are almost done, and cook for another three to four minutes. Place patties in a yeast roll along with the desired amount of BBQ caramelized onions.
