Smoked Venison Salad Spread

You’ve probably prepared venison as a main dish, but it also makes a great appetizer. This salad spread is great served on finger sandwiches, Ritz crackers or vessel of choice.

2 lbs. smoked venison

3 cups Duke’s Mayonnaise

1 cup diced hard-boiled egg

1/2 cup diced onion

1/2 cup diced celery

For this easy-to-make appetizer or sandwich spread, start by slow-smoking a venison hindquarter. Once you pull the meat off the bone, run it through a grinder or chop it fine. Now, add the meat to a large bowl and add all the other ingredients. Mix thoroughly. At this point, you  can add your own touch if you wish. Dried cranberries are a great addition, as are chopped sunflower seeds, or additional spices of your choice.
