Venison Sausage Jalapeno Shots

There are plenty of wild-game recipes out there, but very few for wild-game appetizers. This appetizer is guaranteed to be a hit at your next backyard cookout. Plan on making two or three per guest.

• Venison rope sausage

• 1 block cream cheese

• 1 cup grated cheddar cheese

• 1/4 cup finely diced jalapeno peppers

• Thick cut bacon

• BBQ rub

• BBQ sauce

Cut venison sausage to 1/2-inch lengths. Measure bacon so it wraps around the sausage with a slight overlap and secure with toothpick. This creates a cup of sorts. In the “bowl,” mix the softened cream cheese with grated cheddar cheese, finely chopped jalapeno and a good sprinkling of BBQ rub of your choice. Place combined mixture in Zip-Loc bag. Cut a 1/2-inch corner off the bottom corner of the bag. Squeeze this mixture to the top of the cup formed by wrapping the bacon around the sausage. Sprinkle more BBQ rub on top. Create a medium-high heat on your grill with the heat source on one side. You can add hickory chips for an enhanced smoky flavor. Place the Venison Sausage Jalapeno Shots on the opposite side of the grill from the heat source. Cook until bacon is fully cooked and tightens, about an hour. The cream mixture will overflow and run down the sides. At that point, fully cover the Venison Sausage Jalapeno Shots with BBQ sauce and grill for 10 minutes more. Enjoy!
