Every hunter needs a tender venison pot roast full of rich meaty flavor in their cooking arsenal. A venison sirloin is the perfect cut of meat for a roast.

• 1 sirloin roast

• Small red potatoes left whole

• 1 small bag baby carrots

• 1 large yellow onion, chopped

• 4 stalks celery cut to 2-inch lengths

• 32 ounces beef broth

• 1 pack Au Jus gravy mix

• 1 tablespoon rosemary

Sear the roast on all sides in the bacon grease in a cast iron skillet. Put the onions on the bottom of the crockpot and lay the roast on top. Add the beef broth and the Worcestershire sauce. Sprinkle the top of the roast with Montreal Steak Seasoning, rosemary and thyme. Place the whole red potatoes around the roast. Save the baby carrots and celery until later. Place the cover on the crockpot and cook on low for four hours. After the four hours, add the baby carrots and celery, cover, and cook on low for two more hours. Serve with crusty garlic bread.
