Low-Carb Venison Spaghetti

Wild game like venison is high in protein and has no carbohydrates. Venison spaghetti is a favorite but avoided by some because of the carbohydrates in pasta and the sugars and salt in spaghetti sauces. Here’s a wonderful solution. One serving of Heart of Palm is about 1 gram of carbs and 5 calories. One serving of Parmesan cheese has less than one gram of carbs and 21 calories.

1 lb. ground venison

1 14-oz. can Heart of Palm (linguine cut)

1/2 yellow onion diced

6 cloves garlic minced

6 fresh tomatoes

Olive oil

Salt

Pepper

1 tbsp. Italian seasoning

Fresh Parmesan, grated

Fresh basil

Brown venison and diced onion in iron skillet on medium-high heat. When almost ready, add garlic and stir for 2 minutes. Drain on paper towels. At the same time, boil heart of palm in pot with 2 quarts water and 1 tablespoon olive oil. Boil until soft. Drain in colander. Peel tomatoes. Place in blender with 1/4-cup olive oil, fresh basil and 1 tablespoon of Italian seasoning. Blend on high until reduced to quarter-size bits and juice. Remove to medium pot. Add Italian seasoning and stir. Add tomato mixture and venison. Simmer for 30 minutes. Serve over Heart of Palm with grated Parmesan cheese.
