Wild In The Kitchen: Incredible Venison Italian Soup

Tired of the same old venison recipes? This is unquestionably the best venison dish I have ever made. It feeds eight.

2 lbs. ground venison
12 cups chicken broth
8 slices crisp bacon
2 large onions, chopped
8 large red potatoes, diced
6 cloves garlic, minced
1 1/2 cups heavy cream
Black pepper
salt
McCormick Italian seasoning
half stick butter
Fresh kale, stripped, chopped
Parmesan cheese

Place ground venison in skillet. Add a few dashes of Italian seasoning and scramble. Remove to paper towel. Add onions and garlic to skillet and cook until soft. Melt butter in large pot, then add chicken broth, potatoes onions and garlic. Season with salt and pepper, and simmer until potatoes are tender. Stir in kale, and cook about 3 minutes until kale is bright green. Then stir in venison, crumbled bacon and heavy cream. Simmer 10 more minutes. Stir before serving. Once in bowls, sprinkle with Parmesan cheese.
