Canada Goose Party Appetizer

I’ll be honest. I was no fan of any goose dishes until I had this Goose Pâté appetizer at an upscale wild game dinner. The chef was nice enough to email me the recipe.

3 Canada goose breasts

1 Vidalia onion, chopped

1 jalapeno

1 Tbsp. Dale’s Steak Seasoning

 1 tsp. salt

 1 tsp. pepper

1 tsp. crushed red pepper

1 tsp. Cajun seasoning

1 tsp. garlic powder

Mayonnaise

Horseradish

Cut the goose breasts into 2-inch squares. Add to a crock pot and add water to cover. Cook on low for 8 hours. Remove the squares from crock pot and put them in blender and pulverize. 

Transfer to a bowl. Put onion and jalapeno in blender and pulverize, and then add meat and all other ingredients. Remove the paste to a bowl and add the mayonnaise in small amounts, stirring until you achieve the desired consistency. Whip in horseradish to taste. Refrigerate until ready to serve. Serve with Ritz crackers.
