Poor Man’s Seafood Bisque

Freeze in Cool Whip bowls for a great, quick microwave meal.

Any boiled fish, flaked

1/4 stick butter

2 tablespoons flour

1 small onion, diced

1 bell pepper, diced

1 garlic clove, minced

3 ounces tomato sauce

2 cups fish stock

2 teaspoons Cajun Seasoning

1 beer

1 teaspoon dried basil

1 cup heavy cream

Boil bream, largemouth bass, striped bass or bream filets in the beer in a small pot and save the stock. Flake the fish. Heat the butter and flour in a cast iron pot over medium heat stirring continuously to make a roux. Add the onion, garlic and green pepper, and cook until vegetables soften. Add tomato paste and cook for 1 to 2 minutes. Slowly add the Cajun seasoning, dried basil and fish stock while stirring. Bring to a boil over high heat, then reduce the heat and simmer for 10 minutes over medium heat. Stir with a whisk for 5 minutes. Add the flaked fish and heavy cream and simmer for 5 more minutes.
