Wild In The Kitchen: Oven Baked Dove Crisp

It may not be too hot to sit on a field, but it’s definitely too hot to stand over a grill. Here’s a tasty way to prepare dove breasts in the oven. While they’re cooking, get online and look up Jerry’s cookbook, “Going Wild Southern Style.” It is now available at <www.amazon.com>.

Dove Crisp (Oven-Baked Dove)

12 dove breasts
1/4 cup sandwich dressing
2 Tbl. parmesan cheese (grated)
2 Tbl. onion (minced)
1 box of stuffing mix
2 Tbl. dried basil

salt and pepper to taste

Preheat oven to 375 degrees. In a large bowl, mix sandwich dressing, parmesan cheese, basil, onion, salt and pepper. Pour the box of stuffing mix out on a plate. Dip each dove breast in the dressing mixture, coating all sides. After coating breasts in the dressing mixture, roll them in the stuffing until all sides are covered. Place breasts in a casserole dish, cover with foil and bake them in the oven for about 30 minutes or until the meat is done and the breading is crispy. Serve with mashed
potatoes or rice and gravy.
