Grilled, Glazed Frog Legs

A mess of frog legs cooked in a backyard fish cooker can make for a great meal. Of those who have eaten frog legs, about 99.9% have only had them fried. The swamp delicacy is more versatile than that. Honey-glazed frog legs are made with ingredients you likely have in the pantry.

1-lb. frog legs

1/2 cup olive oil

3 tbsp. soy sauce

3 tbsp. honey

1 tbsp. garlic powder

1 sprinkle ground ginger

1 thinly sliced green onion

Salt and pepper to taste

Wash the frog legs thoroughly, pat dry and set aside. In a large mixing bowl, stir together the olive oil, soy sauce, honey, garlic powder, and ginger. Toss frog legs in the marinade to coat evenly. Allow to marinate unrefrigerated for one hour. Drain the frog legs well and  save the marinade. Season with salt and pepper. Pre-heat the grill to medium heat. In a metal bowl, bring the marinade to a simmer. Cook the frog legs over direct heat until brown and crispy. To serve, pour sauce over the frog legs and sprinkle with the sliced green onion.
