Wild Game Recipes: Fish with Wine & Cheese Sauce

What you’ll need:
6 bass fillets cut into serving-sized pieces
8-oz. package of cheddar or other cheese
Parmesan cheese
1/2 chopped onion
1/2 chopped bell pepper
Medium dry white wine
Sour cream
Parsley flakes

Lightly salt fish, rub lightly with olive oil and place in a baking dish. Drizzle with white wine and set aside. Saute peppers and onions in a pan. Add parsley, salt and pepper to taste. Slowly add cheese and melt over low heat. Add sour cream to taste and about 3/4 cup of wine, and stir until sauce reaches a consistency that will pour. Pour sauce over fish, covering each piece carefully. Bake in an oven preheated to 350 until fish flakes easily with a fork. Increase heat to 500. Sprinkle a light coat of Parmesan over the fish and return to oven for about four minutes, until the cheese browns. Serve hot with remaining wine and sides of choice. Makes enough to feed three people.
